Citylife Dines at Char by Four Seasons

Citylife staff were invited to dine at the new Char by Four Seasons: a new dining experience at Four Seasons Resort Chiang Mai. Char by Four Seasons opens on 10 November 2019, however Citylife staff were very lucky to get a preview. Char by Four Seasons pays homage to the age-old tradition of grilling. Focused on farm-to table ingredients and premium cuts of meat, over 60% of the ingredients are sourced from local farms in Northern Thailand Designed by acclaimed architect Bill Bensley, the beautifully-decorated pit is the piece de resistance of the restaurant. Executive Chef Liam Nealon explained “70 per cent of our menu is cooked here, it explores the relationship between open flame and high-end produce. We work closely with local farmers so that the freshest, seasonal ingredients of Northern Thailand are brought to the fore. Each Recipe is expertly countered with signature sauces and house marinades that deliver the complexity with a punch”. Char by Four Seasons will be for lunch and dinner. Daytime delights include classic wood fired pizzas, salads, house prepared pastrami and striploin steak that flavor the grill concept. Dinner by the fire includes Australian rack of lamb, wide selection of steaks headlined by Black Angus Tomahawk, organic chicken, freshly chucked Coffin Bay oysters and another house specialty is the salt-crusted Arctic Char which arrives with a crisp oven-roasted crust. Pastry Chef Yanisa Wiangnon delivers a fitting finale to this symphony of food with her selection of smoked and flambéed desserts. She explained “look for some local flavours too… fermented sticky rice in a cheesecake is a winning twist, my recommendations are the ‘chocolate on fire, and ‘exotic baba’ with Northern Thailand’s famous Phu Lae pineapple.
